After training at "Ter Duinen", Jan worked in Belgium before moving to California where he studied different cuisines and met his wife Caroline. Together they opened Lotus Root in Eke in 2002. The cuisine, called "California Inspired Cuisine", is a very personalised style of cooking that combines fresh products, classical techniques and Californian & Asian influences. The restaurant does not have a traditional menu.
