A talented owner-chef with a passion for traditional Castilian-La Mancha cuisine
Jesús Gómez-Monedero is chef and owner at restaurant Palio. Jesús runs his family’s fine-dining establishment together with his brother, host and sommelier Isaac. As a young boy, Jesús already loved working with food as he helped his father in the bakery. After his culinary education under top chef Pepe Rodriguez, Jesús joined the kitchens of several top restaurants. In 2009, Jesús decided it was time to open his own establishment, Palio. Here, he conjures up his excellent traditional Castilian-La Mancha cuisine.
To me, cooking is based on two principles: the head and pocket. The head gives you the knowledge to correctly cook the dish and to apply the appropriate method to each ingredient, and the pocket allows you to have access to different ingredients.
