Nicolas Durif

Chef Nicolas Durif is originally from Alsace, Germany. When he was little, he used to spend hours in the kitchen with his grandmother, tasting and preparing dishes. Inspired by her cooking, Nicolas started working at critically-acclaimed establishments, such as 4-star hotel Mercure Rochefort La Corderie Royale’s restaurant. Now, after years of culinary experience, the Michelin-starred chef showcases his skills at restaurant l’Hysope. Together with his excellent kitchen team, he serves modern French cuisine that’s a wonderful blend of seafood, local products, spices, and herbs – among which his one special ingredient which he named the restaurant after: hyssop.

Over the years, Durif's refined cuisine has been rewarded with numerous awards: Its innovative and seasonal dishes have been awarded a Michelin star and 2 toques, 13.5 points and the 2017 Trophée Espoir Nouvelle Aquitaine from Gault Millau. The restaurant’s décor is contemporary, warm, and elegant. This fine-dining location offers you all the tranquility you need to enjoy the chef’s sophisticated gastronomy.
