Werner Croymans

A talented chef who combines French techniques with contemporary international influences.

Chef Werner Croymans opened Somm together with sommelier and restaurant manager Bram van Grinsven in the center of Uden. The name Somm is short for sommelier. This is for a good reason: the restaurant not only has a dining area, but a wine shop as well. Werner chooses his products with care, all the way from the vegetables to the coffee beans. Nothing is left to chance, and only high-quality products are used. Werner’s dishes do not have to look like a painting, to the chef it’s the taste that matters most.

A big trend I like is to focus on products that are not immediately luxury products, and to use them in a varied menu.
