Restaurant De Saffraan is located at the "Hope for Prosperity"; a 100 year old clipper, which has completely been converted into a restaurant. Here, you will find haute cuisine in an intimate and friendly setting. In the deck-house, the former home of the skipper, you have a view of the galley through the portholes. On the deck, you can - just like inside – enjoy an amazing lunch or dinner while indulging in all the beauty that the Netherlands has to offer. In Chef Kars van Wechem’s cooking style, you can clearly taste the Dutch terroir with a refined Asian touch. Hostess Monique Korteschiel has put together a diverse wine list that also includes surprising wines from Dutch soil.

Kars van Wechem starts off his culinary career with a side job as a dishwashing aid at a roadside restaurant. Within two weeks, he gets promoted to kitchen help and gets to bake pancakes and fried eggs. His passion for cooking leads him to enrol in culinary school, during which he interns at Restaurant De Swaen in Oisterwijk. Nestor Cas Spijkers and Nico Boreas teach him that you have to endure and survive in the kitchen. Van Wechem always looks for the highest quality, especially in his education. Thus, he gets himself invited to cook in Gordon Ramsey’s kitchen. A classic kitchen where military discipline reigns. When he returns to the Netherlands, he starts at De Librije. From military discipline to a casual working atmosphere. Chef Jonnie Boer's cooking style is innovative, playful and intensely pure. This is where Van Wechem's love for local Dutch products comes into being. Together with his partner Monique Korteschiel, who also works at De Librije, he eventually wants to go his own way. In 2007, they open restaurant De Saffraan in Amersfoort.
