Chef Jan Marrees has wanted to become a chef from an early age. When he is rejected at the hotel school, he decides to go to the chef school in Eindhoven. As an ambitious apprentice chef, he writes to all the top restaurants in Limburg and is accepted at Restaurant De Leuf by chef Paul van de Bunt. This gives him the solid French classical basis. After De Leuf, Marrees gains experience at star restaurant Lindenhorst. The dressings of chef Ida van den Hurk are exquisite. At restaurant D'r Bloasbalg, Marrees is impressed by the innovative techniques of chef Jan Waghemans. Then Marrees returns to De Leuf, but now as sous-chef. Together with Van de Bunt he cooks towards a star. The next step is De Swaen in Oisterwijk, with Cas Spijkers. After this Marrees is hired as chef at Bretelli. In 2010 he takes over the business and in 2012 he becomes SVH-certified Master Chef. Together with his wife Patricia he places Bretelli on the map and Michelin enriches them with a star. In 2018 Jan and Patricia start Restaurant MARREES, the restaurant where they would like to be guests every day.

Fresh products in an interplay of exciting taste and beautiful combinations. The fragrances stimulate the nose, the plates pamper the eye and the flavours are a treat to the taste buds. Jan Marrees offers an innovative cuisine in which he dares to play with flavours. The dishes are well thought-out compositions in which the sum is more than just parts.
The ingredients must always reinforce each other. Refinement taste and elegance are the most important characteristics of our dishes and are brought together in a harmonious way. Daily fresh supplies of fish, meat and vegetables provide excellent basic products. The source of a fantastic dish is the most carefully selected ingredient. That used to be the case, it is now the case and it will always remain so.
