Restaurant Fris is located in the middle of Haarlem, near Frederikspark. A modern restaurant where chef Rick May presents dishes based on the classic French cuisine, refined with global influences. His French croissant with duck liver, Ibérico ham, Savora mustard with VOC spices, and fig ice cream is an absolute treat for the senses. As a child, Rick May loves cooking with his grandmother. She passes on her passion for cooking to him. At home, there is little time for cooking and May concludes that the cooking style in his mother’s kitchen must change. His contribution is much appreciated. He is only a teenager when he gets to be in control of the kitchen, with a budget of 20 euros per day. He enjoys the fact that everyone at home loves his culinary creations and dreams of, one day, opening his own restaurant. After Secondary School, May enrols in Culinary and Hospitality Schools. He interns in Spain at Castell d'Empordà in La Bisbal and at De Leuf** in Ubachsberg, Limburg. In Spain, it’s his first time cooking with artisanal products. This is also where his personal signature takes shape. At Restaurant De Leuf, he completes the last year of his three-year training as an independent chef. He works under the reign of Paul van de Bunt, who is a great role-model for May. In 2013, he joins the team of Restaurant Fris, where he will be given the opportunity to develop into a head chef. A boyhood dream comes true when May becomes the owner of Fris in 2016.
Fris offers an authentic cuisine with recognizable, high-quality dishes. They only work with fresh, honest and seasonal products from both their own vegetable garden and from top suppliers.
