During his education at the Hotel Management School, Edwin Soumang interns at Restaurant ‘t Swarte Schaep where Chef van den Boogaard gives him a peek into the world of the classic French cuisine. At his second internship, at star restaurant De Echoput, he first comes in contact with the highly refined kitchen. After his studies he starts working at D’r Bloasbalg, where Chef Waghemans teaches him that being patron-cuisinier of a star restaurant means you don’t solely stir in a pot all day, but you’re also involved in all the details concerning the restaurant. In addition to his work in the kitchen, Soumang gets his vinologist degree at the wine academy. Chef Soumang keeps striving for more and dreams of working at the absolute international top. He gains experience in the kitchen with Michel-star awarded chefs Georges Blanc, Michel Roux, Guillaume Brahimi, Jonnie Boer and Heston Blumenthal. This mix of different styles contributes to the development of his own cooking style. During one of his culinary trip, he meets his partner Bethany DeLong. Together they have one common dream and open restaurant ONE in 2007 and receive a Michelin star in 2010.
