Interview with Arcangelo Tinari

Arcangelo Tinari is chef at restaurant Villa Maiella. He took his first steps as a cook in his family’s restaurant. After his culinary education, he worked in many top restaurants in France, Italy, Japan and Hong Kong.  Back in Italy, he resumed his occupation at Villa Maiella, where he currently works as a chef. His outstanding regional Italian cuisine has been awarded a coveted Michelin star. We asked the chef some questions to get to know him better, about his culinary inspiration, his favourite dish, and much more.

Arcangelo, how would you describe your cooking style?

I would describe my cooking style as recognizable regional Italian cuisine.

What's your favourite dish to make?

I enjoy making lamb because it represents the area and I use all its parts.

What is your favourite ingredient to work with?

I like working with wild herbs. They remind me of dishes reminiscent of the rural culture of our region.

Who is one of your top suppliers or producers?

All our small suppliers are selected by their passion and the quality of the products they produce.

What is the biggest challenge you’ve faced in your culinary career?

My biggest challenge was returning to the family restaurant without disrupting the identity and ensuring continuity for our guests.

Which gastronomic trend are you excited about the most?

I don't find satisfaction in following a trend.

If you could only eat one dish for the rest of your life, what would that be?

I hope that doesn't happen to me.

What’s one thing in the area that guests have to see or do?

I would recommend guests to immerse themselves in the beauty of the Maiella National Park.
