Federico Beretta is owner and chef at restaurant Feel. At the Amerigo Vespucci Hotel Institute in Milan he studied to become a catering services technician. Together with his wife Elisa, Federico opened Feel restaurant in 2014 after 11 years of working in various kitchens throughout Lombardy and abroad. To tell the story of the seasons, the land, and the raw materials, chef Federico uses his energy and intuition throughout his cooking. We asked him some questions to get to know him better, about his culinary inspiration, his favourite dish, and much more.
Federico, how would you describe your cooking style?
The dishes I cook represent my vision of the territory in which I live, made up of mountains, meadows, woods and inland waters. Cuisine from this region offers unique tastes and experiences, and reflects the unique nature of this region.
The choice of small producers in this area helps to enhance the sense of terroir in my cuisine.
What is your favourite ingredient to work with?
My favourite ingredients are freshwater fish and wild herbs.
Who is one of your top suppliers or producers?
My favourite supplier is the forest and the nature that surrounds me. The choice of small producers in this area helps to enhance the sense of terroir in my cuisine.
What is the biggest challenge you’ve faced in your culinary career?
As a first-time restaurant owner, one of my biggest challenges was learning how to manage a restaurant.
What’s one thing in the area that your guests absolutely need to see or do?
A visit to Como is certainly a must, with its valuable monuments, its attractive historic center, and its magnificent views. A boat trip is an excellent way to view the city and appreciate the beauty of Lake Como and the landscape.
