Interview with Herman Cooijmans

Owner-chef Herman Cooijmans goes for unexpected and exciting flavour combinations at restaurant Eden. After many work experiences in the culinary world, Herman joined forces with sommelier Robin Groos and opened restaurant Eden. Restaurant Eden is situated in Valkenswaard, in the Dutch province of North Brabant. It is world-famous for its car museum, the DAF museum, which tells the story of the car brand.

Herman, can you tell us a little bit about your background?

I am chef and co-owner of restaurant Eden. I’ve been a chef for over 13 years now, and own my own restaurant for 2 years. I started restaurant Eden in January 2019, together with sommelier Robin Groos.

What do you love most about working in hospitality?

Both me and Robin enjoy being creative, and we challenge each other to be more innovative.

What has been the biggest change in the gastronomic industry since you started your career?

The Covid-19 crisis has had an impact on every entrepreneur in the hospitality business.

I like to make new dishes each season.

Which cuisine is your favourite and why?

I like every cuisine, especially those that are lesser-known. But Nordic cuisine has sparked my interest for a long time now. Because of the way they use their products, and how they stay close to their original looks and qualities.

What is your favourite dish on your restaurant’s menu?

I don’t really have a favourite dish. I like to make new dishes each season.    But I am very excited about two of my current dishes. One is beetroot from the barbecue with strawberry, rhubarb, octopus, and goose liver. The second one is slow-cooked cheeks of monkfish, deep-fried in tempura, glazed with caramel, buckwheat, and hop and hawthorn ice cream.

If a guest is feeling adventurous, which dish will definitely tickle their fancy?

We try to make every dish adventurous, so just pick a dish on our menu!

Which dessert would you recommend for diners with a sweet tooth?

I like my desserts to be as savoury as possible, so unfortunately for those with a sweet tooth, we don’t offer very sweet desserts.
