Interview with Jochen Helfesrieder

Jochen Helfesrieder is chef at Storchen Restaurant Hotel. Here, together with his father and head chef Fritz, he prepares the most wonderful local delicacies. The foundation for any good kitchen is healthy and fresh ingredients, both chefs agree. Jochen received his culinary training at the Colombi Hotel Freiburg and then joined the kitchens of high-end restaurants throughout Switzerland and Germany, before arriving at restaurant Storchen. We asked the chef some questions to get to know him better about his culinary inspiration, his favourite ingredients, and much more.

Jochen, how would you describe your cooking style?

I would describe my cooking style as classically learned, but with a modern focus.

What's your favourite dish to make?

In my free time, I enjoy making fish sticks for my daughters because you can't get them better anywhere else.

What is your favourite ingredient to work with?

Whenever possible, especially during summer, I enjoy working with products from our own garden or from the nearby small farm. Fresh products from nearby proximity are a prerequisite at our restaurant. Additionally, our fish, which is caught close to France, is very fresh, and 90% of our meat and vegetables are grown nearby, in the Black Forest.

Who is one of your top suppliers or producers?

We only have top suppliers, for else we wouldn't be able to cook so deliciously.

What is the biggest challenge you’ve faced in your culinary career?

To every day, whether it is lunch or dinner, summer or winter, give ours guests the very best.

Which gastronomic trend are you excited about the most?

There are no trends for me, just good marketing.

If you could only eat one dish for the rest of your life, what would that be?

That sounds like a sad life that I didn't want to live.

What’s one thing in the area that your guests absolutely need to see or do?

We encourage guests to experience, enjoy and taste the beautiful nature, wine and, of course, the food in our region.
