Interview with Mariano Guardianelli

Mariano Guardianelli is chef and owner at restaurant Abocar Due Cucine. Chef Mariano was born in Cordoba, Argentina. After his culinary studies, he worked in restaurants throughout Spain, France and Italy. When he returned home after his travels he decided to stay in Italy and opened his own restaurant Abocar Due Cucine in 2014.  Here, he conjures up a contemporary cuisine that blends different cultural elements and has great attention to the pure ingredients at the core of each dish. It should come as no surprise that his excellent food has been awarded a coveted Michelin star. We asked chef Mariano some questions about his culinary inspiration, his favourite dish, and much more.

Mariano, how would you describe your cooking style?

My cooking style is characterized by the union of two cultures: the great quality and technique of Italian cuisine and the most primordial cuisine from South America. 

What is your favourite ingredient to work with?

Artichoke is one of my favourite ingredients to work with because of its versatility and unique flavour.

I really like vegetable cuisine in general, due to its variability in different seasons.

Who is one of your top suppliers or producers?

I have a very close and trusting relationship with my fish supplier Roberto Gori with whom I organize my menu, based on the availability and quality of the fish.

What is the biggest challenge you’ve faced in your culinary career?

I think my biggest career challenge was finding myself in the midst of being a chef and entrepreneur and combining this with my personal projects.

Which gastronomic trend are you excited about the most?

The philosophy that has always inspired me is market cuisine. It guides my gastronomic choices based on the availability of seasonal ingredients.

If you could only eat one dish for the rest of your life, what would that be?

Grilled meat, the typical Argentine Asado (traditional barbecue).

What’s one thing in the area that your guests absolutely need to see or do?

The old center of Rimini is full of interesting history and culture that deserves to be visited.
