Interview with Rolf Straubinger

Rolf Straubinger is chef at restaurant fine dining RS in Salach, Germany. This establishment is beautifully situated in the secluded Staufeneck Castle. Here, Rolf and his skilled kitchen team create modern French haute cuisine dishes that are seasonal, honest, and down-to-earth.  Gourmets from near and far flock to this fine-dining spot, which has been awarded a coveted Michelin star for Rolf’s excellent dishes. To get to know Rolf a little better, we asked him some questions about his culinary profession.

Rolf, how would you describe your cooking style?

My cooking style is based on classic French cuisine. I always use the best products available, seasonal and regional ones, and enhance their flavour with spices from all over the world.

What's your favourite dish to make?

I enjoy making fish dishes with a light sauce.

What is your favourite ingredient to work with?

Fish and crustaceans.

Who is one of your top suppliers or producers?

I like working with Frische Paradies, Deutsche See, and many regional organic producers and farmers.

What is the biggest challenge you’ve faced in your culinary career?

My biggest challenge was catering at the ATP tennis tournament on the Weissenhof. There were daily up to 5500 people I had to cook for.

Which gastronomic trend are you excited about the most?

Each trend combines different styles. It is important to me to learn from every new trend and see what works for me.

If you could only eat one dish for the rest of your life, what would that be?

I would choose clams with fennel, tarragon, and white wine.

What’s one thing in the area that guests have to see or do?

Visitors should check out the Mercedes Benz Museum in Stuttgart.
