All Timo Agterberg's childhood memories are set in restaurant De Witte Zwaan, where his father was patron-chef. When he finished his culinary training, Timo was allowed to work as an apprentice cook at De Hoefslag where top chef Karl van Baggem educated him on classic French cuisine. After working in several kitchens, Timo decided he wants to start his own adventure. In 2013, he returned to his home base and followed in his father’s footsteps. He became head chef of restaurant De Witte Zwaan. We spoke with the chef about his cooking style, favourite ingredients and the challenges he has faced in his career.
Timo, how would you describe your cooking style?
My dishes are light and fresh and contain different flavours from all over the world. I bring different structures together and try to stimulate all the senses.
What's your favourite dish to make?
Sweetbread with Gado Gado and Bumbu. So many different flavours come together in this dish that I find it a challenge every time to make the best of it.
What is your favourite ingredient to work with?
Citrus fruits, they are so complete you can literally use them in anything.
Every night is a big challenge

Who is one of your top suppliers or producers?
The asparagus farmer from De Bilt: the Buijs family. It’s special that such good type of asparagus is grown here in the region and we can rely on them.
What is the biggest challenge you’ve faced in your culinary career?
Every night is a big challenge. I want the best for every guest, every night. The belief in this must be complete every night.
If you could only eat one dish for the rest of your life, what would that be?
A typical Dutch food called “kapsalon”, a fast food dish with loaded fries, made by myself.
What's one thing in the area that guests have to see?
The Dom Tower, which offers a beautiful view over Utrecht. Climbing all the stairs will make you hungry, so then you come over and have dinner at our restaurant De Witte Zwaan.
