Valentin Rottner is chef at Gourmet Restaurant Waidwerk. As a young chef, Valentin started his culinary journey with Alexander Herrmann in Herrmann's Posthotel. After this, he perfected his skills with Johannes King in the Söl'ring Hof and with Alexandro Pape in restaurant Fährhaus. Valentin then joined the kitchens of the Spatzenhof restaurant in Wermelskirchen and the Schlosshotel Lehrbach. In 2016, he returned to his family business and became chef at Gourmet Restaurant Waidwerk, where his culinary creations received a prestigious Michelin star.

Waidwerk is the gourmet restaurant of the Rottner family business, where chef Valentin Rottner leads the kitchen as a creative chef. The young chef’s cuisine is precise, his dishes authentic and pure. In addition to the down-to-earth cooking of his father Stefan Rottner, Valentin offers a more contemporary take on the dishes. There are four- and six-course menus available, each featuring regional and seasonal products. Good to know: vegetarian and vegan options are available upon request. Each dish can be perfectly paired with an excellent glass of wine, carefully selected by sommelier Claudia.
Gourmet Restaurant Waidwerk is situated in Nürnberg, is a picturesque town in Bavaria, Germany. Bavaria attracts many visitors for good reasons, including the fantastic Bavarian cuisine, the fine Franconian wine, and the beautiful scenery of the Alps. At the summit of the highest point in Bavaria, the 2963-meter-high Zugspitze, you have a beautiful view of the high alps and the Kaiserwetter. Interesting sights in the area include the historic Rothenburg ob der Tauber, and the Geigenbaumuseum, where you can learn about the history of violins. And of course, there’s the famous Oktoberfest, each year in autumn.
