The cooking style of chef Werner Croymans is modern, classic, traditional, and worldly. He combines French classical techniques with contemporary international influences. A balance of flavours, whether savory, sweet or spicy, creates an exciting effect due to the unique vision of Werner.  His dishes are paired by host and sommelier Bram van Grinsven. The list includes wines with a personal and idiosyncratic character. They fit perfectly with the kitchen of chef Werner Croymans, who searches for pure flavours based on carefully selected ingredients. Signature dishes include fried scallops with cream of goose liver, San Daniele ham, and vinaigrette with white truffle. Or corvina (fish) with Surinamese masala, long beans and beurre blanc. For dessert lovers, there’s the dame blanche with ice cream and chocolate from Madagascar, to give the sauce extra depth.
