In Bergen op Zoom's historical center lies Restaurant 1397 housed in a historic building from 1612. This restaurant, run by hosts Tim Schimmel & Sander Doggen, serves classic French cuisine by chef Sander Doggen, influenced by world cuisine, but with a huge focus on local Dutch ingredients. The wine list includes an excellent selection of wines, carefully compiled of established and alternative wines.
Host Tim Schimmel
At the start of his studies, Tim Schimmel decides he wants to learn about all aspects of gastronomy and make a trip to New Zealand. In Breda, he enrolls in the hotel management school, at the time the only school offering an internship in New Zealand. At that point, he falls in love with Grand Hotel De Draak and restaurant Hemingway in Bergen op Zoom. He decides that this is the place he would like to work while he studies. His wish is realized and he gets a job as a receptionist. Even though a great deal of his passion is food, Tim finds his preferred work is behind the scenes. As a result of his internship in Auckland, he has become a professional manager. While still in school, Tim Schimmel works at the Hotel Indes in The Hague, learning more about what skills a host should possess. Once he finishes his studies, he soon discovers that a 9-to-5 desk job isn't quite his thing. Then he is offered the position of Operations Manager at his home base at restaurant Hemingway in Bergen op Zoom. Tim takes on this challenge with both hands and loves being back at the place where it all started.

The menu at Restaurant 1397 offers a classic and modern French menu by chef Sander Doggen with local and international influences. You can order à la carte, but you can also go for a menu of your choice. The chef likes to work with regional products from Bergen op Zoom and surrounding areas. The modern, visually striking dishes here feature local specialties like Brabantse Wal asparagus and Bergse oyster mushrooms. The sommelier perfectly pairs every dish with a glass of excellent wine, to completely fulfill every gourmet’s culinary dream.
