When Timo finished his culinary training, he worked as an apprentice cook at De Hoefslag where top chef Karl van Baggem educated him on classic French cuisine. After working in several kitchens, Timo returned to his roots and followed in his father’s footsteps: he became head chef of restaurant De Witte Zwaan.

The minimalist, modern-inspired cuisine of De Witte Zwaan stands out for its fine attention to detail. Having worked for major establishments, chef Timo Agterberg puts all of this experience to good use to combine, create and convince his guests with his delicious dishes. You can choose between a creative 3- to 7-course dinner. Specialties on the menu include raw, algae-rolled yellowtail in liquid sweet and sour cucumber, with red pepper, jalapeño ice cream and avocado. And wild sea bass with fennel, leek and leavened shimeji mushroom. Sommelier Danique Haaksman will pair each dish with the perfect glass of wine, completing your extraordinary gastronomic experience.
