Andreas Döllerer, Chef of the Year 2010, has trademarked his culinary explorations of the region under the title “Cuisine Alpine”. His concept of tradition and innovation, which has been developed step-by-step to the very brink of perfection, is a brilliant example of the nexus between artistic approaches to cooking and exclusively top-quality ingredients.
The menus are designed like hikes, a dreamlike interplay between deep regional roots, classical cuisine and individual form. The result: landscape interpretations with wit and style; many of his dishes have already attained the status of modern classics.
Thanks to their own wine dealership, the wine list features a selection of Austrian and international vintages with depth and breadth, leaving virtually no wish unfulfilled. They have nurtured a very personal relationship with many of the winegrowers.
A fantastic, obliging service team demonstrates its sovereign skills in suggesting ideal companion wines, surprising diners time and again with new discoveries, but also bottles that have reached full maturity. Top wines in a small format are an especial focus, while the collection of big bottles is truly impressive as well. Also with regards to the current trend towards alcohol-free dinner beverages, the restaurant demonstrates ultimate creativity.
“Hospitality is the best seasoning”: a saying displayed on one of the pictures that decorate the walls of the hallways and rooms. A coherent motto, indeed, and one that guests are able to experience every day here under the leadership of Christl Döllerer.
Behind the traditional, practically nostalgic building façade is a prevailing sense of modernity, while the elegant lounge by the bar is an atmospheric place of encounter. The rooms and suites are stylishly furnished, affording views either of Golling Fortress or the nature park right next to the house. Their breakfast is one of the best far and wide, with many specialties created right here in-house – a hotel of extraordinary culinary experiences indeed!
At Döllerer’s Wirtshaus guests are able to enjoy the more traditional version of the Döllerer team’s fabulous cooking, the perfect setting for events of every kind.
In their own butcher’s & delicatessen, shoppers can pick and choose from sausage and ham products along with other homemade specialities ranging from jam to punch. Regional suppliers of gourmet foods are well represented, as are painstakingly selected cheeses and fish.
Yet another highlight is the “Enoteca + Bacaro” just outside of Golling, a wine shop that also offers a selection of Mediterranean vinothèque snacks.
Golling is the ideal base for excursions, for example through the pristine natural setting of Bluntau Valley, to Golling Waterfall, or to imposing Salzachöfen Gorge Natural Monument. There are opportunities to play golf and go fishing. In winter, the best ski areas are within convenient reach.
Salzburg City, with its vast cultural diversity and a dominating fortress, is an easy train ride or drive down the autobahn, only 25 kilometres away.
The local tourism attraction is Golling Castle, which dates back to the 13th century; taking place here in summer is the “Little Festival”, also co-sponsored by Döllerer, featuring an array of high-quality musical and literary performances.
