Martin Herrmann always wanted to get to the top - and he did: Today he is not only head chef in the five-star superior Dollenberg Hotel in the Black Forest, but he was also awarded two Michelin stars. With his classic Baden cuisine with French and Mediterranean influences as well as Far Eastern accents, he provides his guests with the finest culinary delights every day. Herrmann also had the honour to cook for the most important world leaders at the NATO summit.

At home, when Martin Herrmann is not in the kitchen, he is climbing the hilltops of his homeland with family and friends - including a stop at one of the Paznaun huts. So participating in the Culinary Way of St James in Ischgl only makes sense. He was only too happy to be part of the squad of top chefs who pamper those who stop for a bite to eat during the hikes initiated by Eckart Witzigmann.

In the "Le Pavillon", the gourmet restaurant of the Relais & Châteaux Hotel Dollenberg, Martin Herrmann and his kitchen team cook at a 2-star level. Herrmann provides culinary highlights by interpreting the classic Baden cuisine in a new way.

Herrmann not only allows for French and Mediterranean influences, but he also skilfully enriches his cleverly arranged creations with Far Eastern accents.

The chefs are often asked about their secret. Star chef Martin Herrmann allows nature, scents and colours to lead and inspire him to ever new creations. "Sometimes you just have to think outside the box. A kitchen philosophy always needs new inspiration".

BADEN-WÜRTTEMBERG

Record holder with over 1500 hours of sunshine per year

With over 1500 hours of sunshine per year, Baden-Württemberg holds the German record. The Neckar River divides the "Ländle" into the Black Forest and the Swabian Alb. Worthwhile excursion destinations are the beautiful university town of Tübingen with its medieval townscape and castle from the 16th century, and the city of Freiburg with the famous "Bächle", the narrow waterways in the alleys of the old town. And of course Lake Constance! The largest lake in Germany, the "Swabian Sea", is popular among cyclists, sailors and hikers. On the south shore, you can find the old border- and university town of Konstanz. The garden and fruit-growing island of Reichenau and the flower island of Mainau can be reached by boat. Not to forget: The beautiful Alsace with the Vosges and the romantic Colmar, the university town Heidelberg with its many baroque red sandstone houses and of course Stuttgart with the "Old Castle" and the "New Castle", the zoo "Wilhelma" and the "New State Gallery".
