The chef likes to use exceptional meats: such as the ribeye of the Livar dry-aged pig, picanha of the Rubia Gallega which has been matured for 120 days, faux-filet of Scottish lamb roasted on hay, Involtini of pheasant with rosemary smoked cebe & Black Forest ham, Pelmeni stuffed with hot smoked sturgeon, sweet onion from Lezignan & gewurztraminer sabayon from Bastide de Songes...
But also a cod steak confit with olive oil from Château Saint Louis, soya beans, Catalan pancetta croutons, kalamansi emulsion, cumin and pink garlic.
