The passionate chef is far from a stranger to the exotic, which he then combines boldly and imaginatively with Waldviertel traditions. In this way, guests are able to enjoy many culinary surprises and imaginative creations with products from all corners of the globe. The result are clever dishes such as crispy pork belly with calamari, rice with meat from alpine oxen served with fried prawns and chili sauce, or white-poppy panna cotta with apricots and a croissant.
Equally high-quality is the wine selection with a focus on Austria and a view to indigenous grape varieties. The very best vintages from Austrian vintners captivate diners, as do fine beers from the private Zwettl brewery or the Weitra Bräu beer workshop. Recommended as a delightful finale are exquisite spirits produced by the Roggenhof, the No.1 whiskey distillery in the Waldviertel.

Thanks to an initiative pioneered by Michael Kolm’s father, Gerhard, nearby Bärenwald Forest provides a species-appropriate habitat for a small group of brown bears which were rescued by animal rights groups from the worst imaginable conditions. Arbesbach, nestled amid the Waldviertel highlands, also features gentle hill country and colorful meadows, for relaxing days spent in an absolutely idyllic setting. Fans of outdoor sports will discover excellent opportunities, including extensive hiking paths, cycling routes and mountain-bike trails, as well as beautifully tracked cross-country ski trails in winter.
