At Restaurant Pfefferschiff, idyllically situated in the countryside on the outskirts of Salzburg, Iris and Jürgen Vigné have been the hosts since 2010. The baroque building was built over 300 years ago by Anton Kaufmann, who owed his wealth to the pepper trade – which is where the name of the restaurant originates (“Pfefferschiff” – “pepper ship”). Formerly a parsonage, it subsequently became an inn and finally a renowned gathering spot for epicureans and gourmets. Behind historically listed walls, its inviting, elegantly furnished dining rooms with an old tile stove, as well as a large outdoor dining area, provide a unique place of enjoyment.

Cuisine

Jürgen Vigné is one of Austria’s elite chefs and has developed his own distinctive signature at the “Pfefferschiff”. His menus reveal his passion for regional products as well as his ability to combine them in ways that are quite unique and inspired. An absolute affinity with all things local in combination with a classic, French foundation raises his dishes to a whole new and very elegant level.

Himself a passionate angler, prize fish such as the golden trout are very close to Jürgen Vigné’s heart, while his seasonally-influenced soup collection is a true hit with the public. His signature dish is radicchio ravioli with black truffle.

 

Wine & Beverages

Big names from Austria, but also a comprehensive collection of international wines ranging from German Riesling to an outstanding compilation of French labels, make the extensive wine list one of the most sought-after in the greater Salzburg area.  No surprise, then, that the wine cellar holds many rare and exciting vintages, with new additions regularly acquired from collector stocks. The selection of open wines is also exceptional, from aged wines to Bordeaux and dessert wines, everything is possible. A splendid digestif wagon with a selection of over 80 distilled spirits.

Activités

The cheese wagon at the Pfefferschiff is in a class of its own. Served with the wide selection of cheeses from Austria, Germany and France are homemade chutneys, cheese ice cream and walnut oil.

From the Pfefferschiff shop, as a gift or to use in your own kitchen: homemade jams and spice blends under their own label. Gourmet Boxes are also available as a special service: Complete meals, such as goose with red cabbage and semolina dumplings, shoulder blade of veal or braised lamb shanks together with soup and dessert, all vacuum sealed by order to take with you and enjoy at home. Alentours

St. Anthony’s chapel, which stands right next to the restaurant, is a popular address for christenings and weddings. It belongs to baroque Schloss Söllheim, also located close by.

Due to its location on the outskirts of the city, Restaurant Pfefferschiff is, of course, inseparable from the festival city of Salzburg (UNESCO World Heritage Site) and its wealth of cultural highlights.

Setting out on the foot- and cycle path which runs right by the restaurant, you can walk into the heart of Salzburg in around  1 ¾ hours.
