Domestic fish, especially those, such as lake trout, caught right here in the Weissensee itself, are a focal point for Hannes Müller in a regionally influenced and exceptionally elegant culinary repertoire filled with flavourful precision and enjoyment.
For this passionate chef, it is important to know where the ingredients for his imaginative creations are sourced, be they vegetables and dairy products from local farmers, or the finest Carinthian sheep’s cheese. His delicately composed dishes are replete with exciting seasoning ideas and aromatic surprises – a very special culinary experience indeed.
In her wine selection, Monika Müller clearly demonstrates her predilection for Austrian labels: Whenever the occasion permits, she sets out to explore domestic wineries in person; which explains why the wine list includes acclaimed vintners, but also some less well-known names. Some of her Austrian rarities include wines from Carinthia as well as ciders.
The beer specialities come from a small brewery in neighbouring Gailtal; the coffee is likewise from a roaster in this same valley. The exquisite digestif selection includes fine spirits from Eastern Tyrol and Salzburg; exquisite fruit juices from Austria and South Tyrol provide an outstanding alcohol-free complement.
Whether summer vacation or winter getaway, this ensemble with an authentic family atmosphere promises all the relaxation and rejuvenation you could wish for. The foundation was actually laid back at the end of the 17th century in the form of a small farm; 1905 saw the opening of the first lodging establishment aimed at guests in search of a classic summer holiday experience.
The “Forelle” is now, of course, a modern establishment where guests can enjoy every imaginable comfort: exquisite room décor including natural woods, balconies with a lake view, a private beach, small wellness area with sauna, steam bath, and a bright relaxation room also looking out on the lake. The small family farm is still run by father Hans Müller and supplies a number of basic products: homemade breads, jams and pastries lend the ambitious breakfast buffet a very regional character.
A small selection of fine foods available to take home with you includes smoked fish mousse, jams, as well as specialties from select producers, including vinegars and oils, Istrian sea salt and full-flavoured spices.
The programme also features wine and culinary events as well as hotel packages that include cooking courses.
The very peacefully situated Weissensee, at 930 m the highest resort lake in the Alps, is a paradise for active vacationers regardless of the time of year. In summer, water lovers are enticed by opportunities for diving, water skiing and angling, while there are also ample opportunities to go mountain biking, hiking and Nordic walking as well.
In winter, the large expanse of natural ice created by the frozen lake waters provides unique opportunities for ice skaters and speed skaters. A small family ski area is also located close to the lake.
