RAU is a restaurant in upper Austria, located on the edge of a natural reserve and surrounded by wild and stunning nature. It offers artful cuisine, while in tune with the environment and supporting the local community.
RAU translates as «rough», representing the surroundings and people in this remote place. It speaks of the wildness of nature in harmony with fine human touches. We refine the natural world in the art of cuisine and also work on a more fair and harmonic relationship between mankind and nature.

The young austrian chef Klemens Schraml was travelling around to learn and cook at the best restaurants in Europe. In a final step he got a Michelin-Star in Zermatt, Switzerland. At the end of 2018 he came back to hishometown, Großraming in the famous National Park Kalkalpen. There he transfigured the restaurant of his parents and together with Christopher Koller he created a very innovative and creative stage.
