A consistent approach has its rewards: Benjamin Parth is one of the shooting stars of the Austrian gourmet scene, also a highly regarded young chef internationally. In his puristic culinary presentation, which he continues to develop steadily and meticulously, he unites classic French technique with modern, occasionally playful accents. In the process, he makes use of the very best products from international suppliers. The result: dishes plated with impressive visual effect, filled with precision and lightness, confident flavours and world-class sauces. His signature dish prepared explicitly with local seasonings: Arctic char with gentian foam.
A special focal point reflected in a list comprising around 400 labels is the presentation of authentic wines, and a broad variety of grapes from Austria especially. With wines representing prominent vineyards and a depth of vintages, the selection is truly exciting. The international wine world is outstandingly represented as well, while a wide selection of open wines also reflects the richness of the cellar.
A fine collection of wines in large bottles and a separate Champagne and sparkling wine menu, a wide selection of aperitifs and digestifs from Burschik Vermouth to fine Tyrolean distilled spirits. Exquisite juices from Kohl in South Tyrol also whet your thirst for non-alcoholic beverages.
“Yscla” is the old Rhaeto-Romanic word for Ischgl and the name for this family-run upscale hotel with an impressive Sgraffitto façade, located in the heart of the pedestrian zone of this innovative and very lively winter sports destination. All rooms have been remodelled in recent years, offering elegant lifestyle comforts in warm colours as well as a sense of generous spaciousness. Use of pine woods results in a pleasant room climate, while the entire building is free from damaging emissions and electro-smog. The vitality area is an exquisite gem with sauna and steam bath, an oasis in which guests discover peace and relaxation.
The restaurant’s cheese wagon is practically legendary: with its perfectly aged French cheeses from affineur Bernard Antony, it has become a pilgrimage destination for cheese lovers. The exquisite selection is in the best of hands with restaurant manager and cheese sommelière Sarah Falch; she knows each cheese to the minutest detail. With Almkäse from Galtür, a domestic product has now also taken its rightful place in this illustrious company.
The in-house Guxa Bar in Jugendstil design is also a perfect after-dinner choice. Conceived as a cocktail and cigar bar, an outstanding bar team treats you to the finest cocktails, accompanied by any one of 30 different cigars which can be selected from the walk-in humidor.
There is certainly no shortage of appealing and challenging sporting activities in Paznaun Valley: hiking and mountain biking in summer, alpine and Nordic skiing as well as snowboarding in winter. A special attraction: major musical events in winter at the Idalpe featuring international greats of the pop world. And let us not forget an impressive new mountain lift: the Pardatschgratbahn.
In summertime, the “Culinary Way of St. James” draws diners to mountain huts throughout the valley with specially created Alpine-style dishes from international star chefs.
