The Dysart Petersham is family owned and run. Everything about the place, its initial restoration, approach to food, drinks and service, commitment to quality ingredients and responsible sourcing, concern for tradition, garden, is driven by a guiding family view and firmly rooted in the shared values of Manager, Barny Taylor, and classically trained Head Chef, Kenneth Culhane. They are supported by a wider team, front of house and behind the scenes in the kitchen and by gardener and forager, bringing delights to us at unexpected moments.

Chef Kenneth, brought up on a farm in deepest SW Ireland near the sea, steeped in the unchanging cycle of traditional farming, has moved from science initially to cooking, learning his craft with some of the world’s finest chefs, Guillaume Le Brun at Patrick Guilbaud in Dublin, Maître Cuisinier de France, Pascal Bouvier at Le Choiseul in the Loire, each a 2-starred Michelin chef, and with Tetsuya Wakuda in Sydney, with 3 Hats.
Sommelier: Barny Taylor
Classical training and skills, the starting point. - Add the finest ingredients:
• from nature
• our own, grown and foraged locally for us, over 70 different herbs and many old variety vegetables
• from top quality sources, usually small scale, artisan, producers, sharing our passion for purity and flavour
• the best from England and from Rungis market in France
• seasonality implicit for flavour, ringing the changes, proper husbandry and respect for sustainability
Dishes adjusted daily as the ingredients come in. Craft and tradition of French cooking, passionate influence from the flavours and culinary ideas of Asia.
Another passion at The Dysart Petersham is music, with our antique Bechstein grand piano being the cornerstone. Our classical recitals take place on the first Sunday of each month. Every Thursday, Friday and Saturday evening we present a musician as a backdrop to the restaurant. Kenneth Culhane and Barny Taylor host a number of personal cooking demonstrations with wine matching.
WINE DINNERS - the wines are individually selected by Barny and Kenneth, working with the winemaker to ensure that the wines are representative of their House.
The wine maker and producer, often a member of the wine House family, attends to help introduce the wines.
This is truly exceptional countryside in Town. Petersham remains in character a country village, in a country setting. In front of us there is Richmond Park, beside us there are the Petersham Woods. Behind us there are the water meadows, with cows grazing from May to October, and the River Thames, leading to the Carolian avenues of Ham House and the wild flower haven of the Ham Lands. We are surrounded by beautiful trees, in all directions. It is possible to wander through these spaces and the woods in a rural and village environment.
