Restaurant Hemingway is located in the historical centre of Bergen op Zoom. A restaurant named after Ernest Hemingway, writer and bon vivant with a great appreciation for food and wine. Here, you will find a classic French cuisine with worldly influences, but also with a vast focus on local Dutch products. The wine list has been compiled by the register vinologist Guus Van Dijk. At the start of his studies, host Tim Schimmel kills two birds with one stone. He wants to study all aspects of gastronomy and make a trip to New Zealand. He enrols in Hotel Management School in Breda, at the time the only school with internships in New Zealand. Before actually starting his education, he explores the surroundings. This is when he falls in love with Grand Hotel De Draak and Restaurant Hemingway in Bergen op Zoom. He decides that this is where he would like to work during his studies. His wish comes true and he starts off working as a receptionist. His great passion is cooking, but during his internships he discovers that he prefers to work in front of the scenes. His internship in Auckland has shaped him from a trainee to a trained professional. During his education, he works at Hotel Des Indes in The Hague, where he learns what skills a host should have at a 5-star level. After his studies he experiences that a 9 to 5 desk job as Marketing Assistant is not quite his thing and he is offered the position of Operations Manager at his home base in Bergen op Zoom. He takes on this challenge with both hands, because old love never dies!

Enjoy a classic and modern French menu with local and wordly influences. You can go for a menu of choice, but you can also enjoy an à la carte dinner. The menu is put together by chef Sander Doggen, who prefers to work with local products from Bergen op Zoom and her surroundings.
Grand Hotel de Draak is the oldest hotel and also the oldest company in the Netherlands. They have been hospitable for over 600 years and are situated in the centre of Bergen op Zoom, located at the Grote Markt. A visit to the hotel will take you back to the Middle Ages, but with contemporary comfort.
