In the interior of this trendy industrial heritage, the funky colour palette is immediately noticeable; a palette that subtly contrasts with the rough concrete walls. Determined, Joppe Sprinkhuizen goes to culinary school. During his training, he interns at Het Hof van Deurne. Master-chef Cees van Boerdonk is a great inspiration, he teaches Sprinkhuizen that everything has a reason and teaches him the basics of molecular gastronomy. Sprinkhuizen starts working at Daelenbroeck Castle in Herkenbosch, an educational period in which he lays the foundation for his future cooking style. He wants to further refine his base and returns to chef van Boerdonk. His next learning address will be Restaurant Onder de Boompjes* at Castle Hattem. With chef René Brienen, he immediately gets thrown in the deep end and therefore he learns quickly. Upon the advice of Brienen he goes to De Sterklas, the highest culinary education in the Netherlands. Under the wings of SVH Master Chefs Henk Savelberg, Edwin Kats and Dick Middelweerd, he completes the training. Afterwards he stays with Middelweerd. At De Treeswijkhoeve** in Waalre he climbs up from apprentice to sous-chef. Sprinkhuizen wants to reach new milestones. He opens his own restaurant SILLYFOX in 2017 and immediately gets mentioned in the Michelin Guide.
