Vila Podvin

Restavracija

Vila Podvin is a part of the Podvin estate (first mentioned in documents already in the 14th century) and it was altered from a stable for horses into a restaurant with rooms in 1968. In Vila Podvin, we explore tradition (local ingredients, local producers, local dishes, artisan and handicraftsmen, customs).

We are proud:
- that our house is adorned with Stane Kregar’s stained windows;
- that every 1st Saturday of the month our garden hosts the Podvin market,
- to have arranged a pottery workshop
- to share our knowledge in the Uroš Štefelin’s cooking school (for children, adults, and professionals);
- that we’ve linked up with other inns in Radovljica into Okusi Radolce (taste Radolca) …;
- that through research and creation we get to know our essence and share it with our guests, and that we are altogether becoming more confident and proud to be Slovenes.
Moreover, it was the Podvin estate where the Slovene constitution was written.

Uroš Štefelin

Jeune Restaurateur

‘The old that we do not know how to preserve, and the new that we don’t (yet) know how to create’– these are the guiding principles and challenges that chef Uroš Štefelin likes to take on head first at Vila Podvin. Of the traditional dishes made from offal, only Kroparska žonta– a dish made of the liver - remains, because Uroš really enjoyed eating it at his grandmother’s home. Radovljica’s locals would likely have long ago had enough of Gorenjska želodec (cured pork stomach), because it takes so long to cook and it's necessary to wait until winter to eat it, had Uroš not turned it into nouvelle cuisine. And tepka, an old variety of Slovenian pear, would only be used in spirits if the head chef of Podvin’s team of chefs did not have the sense, knowledge, and ideas for how to use and preserve these pears and use them for breakfast in Carniolan sausages, for lunch in pasta, and for dinner with foie gras. Chef Uroš Štefelin upgrades the tradition in such a refined way, that the overgrown castle located next to Slovenia’s most beautiful restaurant garden isn’t even noticeable.

Sommelier: Urban Hofbauer

Cuisine

Uroš finds challenges in discovering forgotten local ingredients, getting to know them, and creating new dishes in his own unique way. With modern techniques and creativity, he transforms traditional dishes into culinary delights of Slovene Nouvelle Cuisine.
