All Timo Agterberg's childhood memories take place in Restaurant De Witte Zwaan, where his father was the patron-cuisinier at the time. From an early age, Timo learns the tricks of the trade as he grows up amidst his family’s love for cooking. Later, Agterberg goes to culinary school and gets to work as an apprentice at De Hoefslag. Chef Karl van Baggem teaches him all about the classic French cuisine. At De Hoefslag he learns that as a cook you have to have an iron discipline. After De Hoefslag he is hired as an apprentice cook at Restaurant De Saffraan. Chef Kars van Wechem has a fresh, light and elegant cooking style with oriental tints. Here, Agterberg gets a taste of the passion for the profession. He wants more and, preferably, to start his own restaurant. He is only 21 years old when suddenly his big opportunity presents itself. In 2013, he returns to his home base and becomes, just like his father, head chef of Restaurant De Witte Zwaan. In 2015, Danique Haaksman joins the team as a hostess. They successfully put De Witte Zwaan on the map and are, therefore, recommended by various restaurant guides.
