Chef Edwin Soumang studied at the Hotel Management School. He interned at restaurant ‘t Swarte Schaep under chef van den Boogaard, who introduced him to the world of the classic French cuisine. His second internship at star-restaurant De Echoput was his first contact with a highly refined kitchen.

In his kitchen, Edwin works with fresh vegetables from his own vegetable garden. You can even watch him work his magic at the chef’s table that gives you a direct view of the kitchen. The importance of quality ingredients is unwavering and plays an important role in his cuisine. With its trendy industrial decor and striking murals, the loft-style interior of the restaurant adds to this culinary spectacle.
Modern Dutch cuisine decorates the plates of diners at ONE and amazes their taste buds. Restaurant ONE sources much of its produce from its own soil in the large vegetable garden. Fresh ingredients from nearby suppliers also play an important role in composing the dishes. Chef Edwin Soumang brings creative contemporary Dutch cuisine to life. Earthy Jerusalem artichokes, umami-rich miso cream, and an intense cocoa sauce with game are some of the amazing tastes here. Specialties on the menu include royal Belgian caviar with ravioli, pea and green herbs and veal fillet with onion tatin, black garlic, sweetbread, and porcini mushrooms. Sommelier and hostess Bethany DeLong will guide you from country to country with the variety of international wines, carefully selected to accompany your meal.
In the city of Roermond lies an old factory, transformed into a designers dream. With elegant table linen, soft lighting and designer chairs, the raw character of an old historical building gets a modern touch. A tastefully composed environment that matches perfectly with ONE's culinary creations. The restaurant has a fantastic loft space for private dining and a bar. What’s more, the kitchen has a chef's table that seats up to five guests at a time, so you can watch the show unfold. Next to the indoor area, ONE also has a beautiful outdoor terrace on the water.
