Born in Belgrade in 1977, Nikola has been passionate about cooking since his early childhood. After graduating at the University of Bologna, specialising in tourism economics, he became chef of the prestigious Bolognan restaurant Ai Butteri, as well as a member of the Professional Association of Italian Chefs. In 2014, as one of two partners, Nikola opens the restaurant Salon 5, which quickly becomes the top-rated gourmet restaurant in Serbia. Featuring a unique concept - located in a private apartment - the restaurant remains popular to this day, and recognised not only by the local gastro community in Serbia, but the surrounding region overall. In 2017, together with his partners and team, Nikola opened a brand new restaurant, Salon 1905, set in the iconic “Belgrade Cooperative“ building in the heart of the Serbian capital, soon to become Belgrade’s number one fine dining destination.

“Belgrade Cooperative“, also known as “Geozavod”, is one of the several most important buildings in Belgrade, in terms of architectural style, historic legacy and cultural heritage. The monumental edifice is a testimony to Serbian architecture at the turn of the 20th century, mixing together different styles such as Baroque and Art Nouveaux with equal splendour. Reconstructed in 2015, it stands at the entrance of the glitzy Belgrade Waterfront housing complex on the bank of the Sava river, as a symbol of Belgrade’s allure and an inspiration for the city’s years to come.
Following years of honing his skills in various restaurants in Serbia and abroad, David Simunic became the Head Chef at Salon 1905 in 2017. His passion for gourmet and fine dining cuisine, alongside his dedication to a top-end customer service, made him the ideal candidate for this sought-after position. David is the boss of our kitchen and the mastermind behind Salon 1905’s unique and irresistible menu.
