He is a grill master, and is willing to work hard to create good food and make impressive dishes out of humble ingredients - for example his famous Brač lamb tripe in a tomato sauce. Ante derives inspiration from the island, and he feels privileged to collaborate with local farmers on the Brač Island. This is how he adds a contemporary touch to his Mediterranean dishes. His entire cooking philosophy revolves around three words - homemade, seasonal, and regional, with which Ante interprets traditional Mediterranean dishes in his modern eclectic style. For more than 700 years, Brač was part of the Venetian empire, and the Venetians had a significant influence on the island.
