Interview with Gaetano Trovato

Gaetano Trovato is chef at Ristorante Arnolfo. After his culinary education, Gaetano traveled to France and Switzerland to refine his cooking technique and learn about classic French cuisine. After this, he returned to Italy and opened his very own fine-dining establishment Arnolfo in 1982. At Arnolfo, the chef beautifully showcases his critically-acclaimed cuisine. He creates innovative signature specialties by utilizing the highest quality seasonal ingredients from the region. We asked the chef some questions to get to know him better, about his culinary inspiration, his favourite dish, and much more.

Gaetano, how would you describe your cooking style?

I would describe my cooking style as a fresh, seasonal Italian cuisine, with great attention to raw materials. 

What's your favourite dish to make?

My signature dish is the pigeon, with pear from the Valdichiana region. It’s a beautiful portrait of our terroir.

What is your favourite ingredient to work with?

I really love cooking scampi because it is sweet and has a long persistence.

Who is one of your top suppliers or producers?

One of my top suppliers is Laura Peri. We share the same work philosophy and values.

What is the biggest challenge you’ve faced in your culinary career?

For me, every day is a challenge. I strive every day to create something special, with the focus on always improving and surpassing myself.

Which gastronomic trend are you excited about the most?

I’m excited about the terroir trend and Mediterranean inspiration.

If you could only eat one dish for the rest of your life, what would that be?

I would choose asparagus, with egg and truffle.

What’s one thing in the area that your guests absolutely need to see or do?

I would recommend guests to visit the crystal factory, Brolio Castle, and the historic Ama Castle.
