Interview with Josef Mühlmann

Josef Mühlmann is chef at restaurant Der Gannerhof. Chef Josef is at the heart of this Austrian culinary hotspot. It used to be his grandfather's farm, but Josef's father, Alois Mühlmann, decided to transform it into the ultimate fine dining hotel restaurant.  In 2003, Josef joined the kitchen team. Inheriting his mother’s cooking skills, it was only a matter of time until he’d start working as a restaurant chef. We asked Josef some questions to get to know him better, about his culinary career, his favourite ingredient, and much more.

Josef, how would you describe your cooking style?

I would describe my cooking style as simple, sexy, and very Alpine.

What's your favourite dish to make?

It's fun to make dishes that reflect the character of someone.

What is your favourite ingredient to work with?

It’s amazing how much you can use lovage and water and how the results are always different from what you expect.

Who is one of your top suppliers or producers?

My top suppliers are our own garden and the farmers from East Tyrol, a fabulous mixture of Alpine diversity.

What is the biggest challenge you’ve faced in your culinary career?

The biggest challenge for me was maintaining a healthy work-life balance.

Which gastronomic trend are you excited about the most?

When reason in the gastronomic world triumphs over money.

If you could only eat one dish for the rest of your life, what would that be?

Something cooked by my wife Carola. Her goulash is better than mine.

What’s one thing in the area that your guests absolutely need to see or do?

I would advise visitors to stand still and really take in the beautiful Alpine surroundings.
