Rafael and Paulo met when they worked at The Fat Duck, and now join forces at Da Terra to serve Latin American inspired flavours with an Italian core. From São Paulo in Brazil with an Italian background, Rafael Cagali began his career in London. He moved to Italy to work under Chef Stefano Baiocco at A Villa Feltrinelli for three years. His career progressing in Spain led him to work for chefs Quique Dacosta and Martin Berasategui. He then returned to England to join The Fat Duck by Heston Blumenthal and eventually opened restaurant Fera at Claridges. Paulo Airaudo comes from Argentina and has worked in restaurants around the world since the age of 18, including Mexico, Peru and several European countries. He joined legendary restaurants including The Fat Duck in London, Arzak in San Sebastián and Magnolia in Italy. Paulo got a Michelin star in 2017, after only half a year at his own restaurant, Amelia, in San Sebastian.
