Thorsten Probost was personally responsible for the sensational cuisine here for over 18 years. And now, even though he has withdrawn from active involvement in the kitchen, he still maintains ties as a consultant, ideator and food scout. Stepping up to the stove is Matthias Schütz, who had previously garnered positive critical attention in the Ausseer Land, impressively underscored by numerous awards including “Newcomer of the Year” both from Guide Gault Millau as well as the Rolling-Pin Awards. Standing at his side is Dominic Baumann, who was previously the very successful right-hand man of Probost himself.
When recommending a perfect companion wine, the passionate team of sommeliers is able to draw upon one of the best cellars in all of Arlberg. You might be inclined to believe, when faced with such a breadth of global wines and vintages, that there is (almost) nothing they don’t have. Wines by the glass are not merely served from large bottles, but also in the form of perfectly matured classics. With a surprise or two in store as well! The health aspect of the establishment as a whole has also gained a foothold within the beverage culture: including extracts of herbs, homemade juniper syrup with tonic, fruit juices from Vorarlberg along with tea drinks, perfectly attuned to the menu.
