Interview with Iris Bettinger

Iris Bettinger is chef at restaurant Reuter. After completing her training as a cook in Freiburg in 1998 at the Colombi Hotel, she worked at various restaurants in France, Hamburg and Munich. Since 2007, she is the owner and head chef at restaurant Reuter. Here, her classic French cuisine is seasoned with regional accents, or perfectly refined with Far Eastern nuances. Her culinary efforts were awarded a coveted Michelin star and in 2014, she was named “Best Chef of the Year”. We asked Iris a couple of questions about her cooking style, her biggest career challenge, and more.

Iris, how would you describe your cooking style?

I would describe my cooking style as classic French, with a penchant for spices from all over the world.

What's your favourite dish to make?

A new one for every season. During the summer I love tomatoes in all their diversity.

I enjoy working with fresh, seasonal ingredients.

Who is one of your top suppliers or producers?

We have many suppliers with whom we have been working for years. From local vegetable producers and small farms from which we get our pigs, to major suppliers. They are good and important relationships that have been built up over many years.

What is the biggest challenge you’ve faced in your culinary career?

Moving back home after my years of traveling through big cities. Trying to understand how people in my homeland eat and drink. In retrospect, that was probably my greatest culinary challenge.

Which gastronomic trend are you excited about the most?

It's wonderful that guests are open to handcrafted meals. They are much more informed nowadays and live more consciously. Moreover, they are appreciative of our efforts in creating special products beyond mass production.

If you could only eat one dish for the rest of your life, what would that be?

A loaf of good bread with constantly changing toppings.

What’s one thing in the area that your guests absolutely need to see or do?

I would recommend guests to explore East Westphalia by bike, as the region has a well-developed network of cycling routes. There are also many world-famous brands in our region with an interesting history, like Miele, COR Möbel, Bertelsmann, and Claas.
