Interview with Patrick Müller

Patrick Müller is head chef at restaurant Alps & Ocean. After his culinary training, Patrick did an apprenticeship as a chef in his parents' establishment Hotel Sonnenhof with top chef Klaus Schuster. He joined hotel restaurant Alps & Ocean in 2008 and has been ruling the kitchen here ever since. His delicious Alpine cuisine has been awarded 3 toques and 16 points from Gault-Millau, as well as 92 points and 3 forks from Falstaff. We asked this talented chef some questions to get to know him better, about his culinary inspiration, his favourite dish, and much more.

Patrick, how would you describe your cooking style?

I would describe my cooking style as Alpine cuisine, using only the best quality ingredients. My focus is on the taste itself, International and yet down-to-earth. I combine regional foods and dishes from around the globe. 

What's your favourite dish to make?

I like to cook beef tartare because we prepare it classically and serve delicious caviar from Austria with it.

I prefer to work with truffles. They are exotic and earthy at the same time.

Who is one of your top suppliers or producers?

My top supplier is Pilz Lenz from Vorarlberg. They provide us with the best mushrooms and fruits.

What is the biggest challenge you’ve faced in your culinary career?

I see every day as a challenge to give my best.

Which gastronomic trend are you excited about the most?

I’m very excited about the new bistro trend. Guests can enjoy the b food and wine in a relaxed atmosphere. Also, we are delighted to embrace the trend of alcohol-free food pairings.

If you could only eat one dish for the rest of your life, what would that be?

Our beef tartare with caviar from Austria

What’s one thing in the area that your guests absolutely need to see or do?

I would recommend visitors to enjoy nature and tranquility in our region. This can be done in our chalets that are available from spring 2022.
