It has always been chef Martin Herrmann’s dream to become a top chef. Working as an apprentice chef, Martin Herrmann already showed great subtle creativity and precise craftsmanship. And it didn’t take long until his skills caught the attention of his brother-in-law, Meinrad Schmiederer, who is hotel Dollenberg’s patron and Le Pavillon’s former chef.

At Le Pavillon, head chef Martin Herrmann and his skilled kitchen team prepare refined culinary art. Inspired by nature, scents and colours, Martin presents a re-imagined classic Baden cuisine with global influences. This results in plates with a sensual composition of colours, shapes, smells, and textures. This restaurant offers 5- to 8-course menus. The top chef’s specialties include saddle of venison with celery, porcini mushrooms, and cranberries; and Carabinero prawns with basil ice cream, fennel, and chorizo. The menu varies and depends on the market-fresh availability of products.
