Chef Jean-Yves Drevet is an expert at mixing local ingredients to create fresh, creative cuisine. He works exclusively with seasonal ingredients. Therefore, the dishes at Maison du Prussien are distinctly different during spring and autumn. A spicy, warm cuisine dominates his winter plates, while fresh, light food is his specialty in spring. Guests favorites include blue lobster tartlet, peach and chanterelle salad, caramelized cinnamon blossom vinaigrette, or the exquisite pike-perch from local lakes, grilled zucchini and eggplant caviar, peppers with St-Aubin saffron, and rosemary butter.
