As a student, chef Joppe Sprinkhuizen started out very determined at culinary school. During his training he interned under master-chef Cees van Boerdonk at Het Hof van Deurne. Cees turned out to be a huge inspiration and taught Joppe the basics of molecular gastronomy.

Restaurant SILLYFOX is housed in a unique location: on the top floor of a former grain silo, 32 meters above the ground. Restaurant SILLYFOX is a restaurant with soul and respect for everything that grows and lives. The kitchen use honest, local and fresh products to create the best contemporary Dutch cuisine. Chef Joppe Sprinkhuizen has specific techniques he likes to use. For example, he prepares langoustine into tartare and roasts the meat lightly so that the contrasting textures provide a distinguishable tone in taste. The salty and sweet flesh is further enhanced by flavours of orange blossom, yogurt, and passion fruit, creating an excellent experience for your palate. Signature dishes include entrecote & goose liver black garlic, onion structures and gravy with fenugreek, and for dessert, the famous bastogne souffle cake with banana, passion fruit and chocolate.
Restaurant SILLYFOX, located in the town of Veghel, is situated 32 meters high above the ground in the monumental storage building “Wiebenga Graansilo” in the town of Veghel. Upon entering this trendy building, the vibrant colour palette is immediately noticeable, contrasting with the rough concrete walls. What’s more: from each table you have a direct view of chef Joppe Sprinkhuizen's open cooking stage. This way you can see him work his magic and create all of the excellent dishes you get to enjoy. The outdoor terrace is open during spring and summer and offers a gorgeous view over the surrounding area.
