Around 75 kilometers north of Paris, in the city heart of Beauvais, lies restaurant Le Senso – which is surely one of the best establishments in the area. This modern gourmet hotspot is owned and run by chef Allan Castellote and his brother, sommelier Tristan. Here, these skilled siblings will pamper your palate with local specialties and perfect wine-food pairings. It’s not hard to grasp why chef Allan’s cuisine was honoured with 1 hood from Gault Millau: he always manages to surprise his diners with graphic compositions and well-executed creations, again and again.

Chef Allan Castellote studied philosophy and law but, inspired by his roots, quickly turned to his (grand)mother’s French-Spanish cuisine that had amazed him since he was a kid. After graduating from the Ecole du Cordon Bleu in Paris, Allan worked with legendary Michelin-starred chefs such as Yanick Alléno, Philippe Mille, Christophe Moisand, and Alain Dutournier. He also cooked in renowned multi-Michelin-starred restaurants such as hotel restaurant Le Meurice (Paris), the Domaine Les Crayères (Reims), and the Carré des Feuillants (Paris). After these culinary highlights, chef Allan moved back to his hometown. Here, he opened restaurant Le Senso in 2013, together with his brother. Honouring France’s rich culinary tradition, chef Allan sometimes also draws his inspiration from foreign classics. The result: local flavours with a contemporary twist.

With a great eye for detail, chef Allan Castellote presents the most creative dishes. He works with fresh, seasonal produce and local producers, which allows for an authentic and generous cuisine. Restaurant Le Senso offers a mostly seasonal lunch and dinner menu that varies per week. In addition, they also serve a 6-course tasting menu. Expect simple yet delicious dishes such as the salmon skewer with satay, arugula, and yogurt sauce. Whatever you choose, make sure you don’t miss out on the chef’s specialty: kouign-amann (Breton cake, also known as “Europe’s fattiest pastry”). Good to know: vegetarian and vegan options are available upon request.
