Through the Chef's Menu, Vue de monde explores a modern take on traditional fine dining. The location used to take its inspiration from Europe. But now the restaurant celebrates native Australian ingredients and beautiful home-grown produce. Shannon Bennett is an ambitious chef. And he continuously strives to make Vue de monde Australia's most sustainable restaurant. As a result, his team uses over 50 cutting-edge technologies, from an E-water system to eco-friendly 'cold kitchen technology'. When possible, chef Bennett uses local and seasonal produce.

In 2005, restaurant Vue de monde moved from its original Drummond Street to the Normanby Chambers, in the central business district of Melbourne. With this move, the long-time niche French restaurant transformed into an elegant fine-dining spot. This move also brought Vue de monde international recognition, including an unheard of 19/20 score in The Age Good Food Guide. In 2003 Vue de monde’s chef Shannon Bennett won the Australian Gourmet Traveller’s Best New Talent Award'. Since 2011, Vue de monde resides on the 55th floor of Melbourne’s impressive Rialto building. This breathtaking view truly puts the ‘vue’ in Vue de monde. The restaurant’s interior is simple yet sophisticated. You’ll see that Australia’s history is tastefully reflected in the design.
