Mathijs Jacobs inherited his mother’s love for cooking. At a young age, he already knows he wants to be a chef when he grows up. He enrols in Hotel Management School, where he gets to intern with chef Nico Boreas at Castle Erenstein. Chef Boreas teaches him that - besides hard work and discipline - you have to enjoy yourself, but above all that playing football and snooker together are important for the team spirit. At Restaurant Onder De Boompjes, under the guidance of chef René Brienen, he gets to work as chef de partie. Jacobs is in awe of this chef’s quality and his preparation techniques. The next step is Hof van Deurne, where Jacobs becomes the sous-chef to master chef Cees van Boerdonk. This teacher masters the French classic cuisine like no other and teaches Jacobs a solid basis. At Restaurant Valuas, he learns from chef Eric Swaghoven that you can only obtain a Michelin star through structure and discipline. Jacobs feels that he is ready for his own business and opens Restaurant De Beejekurf in Venray in 2013. A year later, his wife Hanneke Verstappen joins the business as the hostess. Even though she had no hospitality training, she complements Jacobs and his team perfectly.
