Herman CooijmansAs an apprentice cook, chef Herman Cooijmans discovered his true passion for gastronomy. After working at Hostellerie Vangaelen in Heeze, Herman joined several Michelin-awarded kitchens. In 2018 he decided to start his own business in Valkenswaard, together with his partner, sommelier Robin Groos. The key focus of Herman’s work is to come up with innovative dishes that are at the forefront of culinary trends.

Robin GroosSommelier Robin Groos is an aspiring vinologist with a deep passion for rare wines. During his childhood, he was fascinated with flavours and wanted to become a chef. But later in life, his interest changed more into wine and he decided to specialize at the Wine Academy after his culinary education. Bringing the perfect glass of wine to compliment each dish is Robin's passion. He enjoys sharing that knowledge with diners at restaurant Eden.

Restaurant Eden in Valkenswaard combines the best qualities of chef Herman Cooijmans and host and sommelier Robin Groos. For many years, they worked together in Heeze at Hostellerie Vangaelen. After going their separate ways, they realized a joint dream of hospitality in their province with restaurant Eden.

Eden’s cuisine
Restaurant Eden represents hospitality, gastronomy and a wonderful experience. This inn is the playground of chef Herman Cooijmans and sommelier Robin Groos. Their cuisine shows a surprising mixture of subtlety and artistry, flavoured with influences from around the world. Chef Herman Cooijmans uses spices from the Middle East for an exotic flair. His talent also shows in the contrasting combinations he brings to the plate. It might seem a bit strange to serve watermelon with spiced curry and skate with strawberry, but these dishes are surprisingly delicious. Two specialties in the menu include watermelon in little gem met bergamot, avocado in Padrón pepper and ray fish with strawberry, mushroom, cucumber and beurre blanc. Wine lovers are sure to find their own little Garden of Eden here with exquisite wine pairings that complement the cooking.

Valkenswaard surroundings
The interior at restaurant Eden creates a magnificent paradise with a nice vintage touch and warmth, derived from the use of natural materials and colours. This modern inn is located in the town of Valkenswaard, North Brabant. “Valk” is Dutch for falcon. The name Valkenswaard came about because falconers lived and hunted wild falcons there. Interesting sights in the area include the falconry and cigar-makers museum, and for car lovers, the DAF museum, which tells the story of the DAF brand, including trucks and rare production and prototype vehicles.
