Chef Jemmy Brouet has worked at renowned three-star restaurants, such as Domaine Les Crayeres in Reims, l'Espérance (with chef Marc Meneau), and Le Jules Verne – where he was the right-hand man of top chef Alain Ducasse. Today, chef Jemmy shows his daring and creative French cuisine at his very own restaurant, Le Bouillon. Working with perfectly ripe vegetables and fruits that were picked the same day, the chef doesn’t simply turn ingredients into meals: he wonderfully pays homage to the ingredients’ textures and flavours.

Le Bouillon’s cuisine

At restaurant Le Bouillon, chef Jemmy Brouet works with the best flavours of the ocean, from freshly-caught fish to top-quality oysters. As the chef is not a fan of culinary monotony, the menu changes each week. As you already expect, local seafood specialties play a starring role. You can order the 2- to 4-course market menu or the 3- to 7-course surprise tasting menu. Expect dishes like sea bream ceviche with creamy cauliflower and mimosa; and the saddle of rabbit with mustard, figs and wild mushrooms. For dessert, there are many delicious options, including the chef’s tarte tatin with vanilla and tonka half-whipped cream. Next to the meat- and fish-based dishes, the restaurant also offers exciting vegetarian options, as well as a children’s menu for the little ones.

La Rochelle area

Restaurant Le Bouillon is located near the city heart of La Rochelle. From here, the beaches on the Atlantic coast, the La Rochelle market and the local fishing port are well within reach. A few interesting city sights include Vieux Port (fortified seaport on the Bay of Biscay), the Aquarium of La Rochelle, and the Towers of La Rochelle. Sports enthusiasts will love the nearby Île de Ré as it’s the ideal place for sailing, surfing, horse riding, tennis, and cricket.
