1995 stieg er als Küchenchef im "Posthotel Alexander Herrmann" im fränkischen Wirsberg ein, das seit 1869 im Besitz der Familie ist. 1997 wurde er in den Kreis der Jeunes Restaurateurs d’Europe Sektion Deutschland aufgenommen, deren Präsident er von 2007 bis 2010 war.

At restaurant Posthotel Alexander Herrmann, top chef Tobias Bätz serves well-thought-out and original food combinations, full of exciting contrasting flavours. Diners have the choice between the menus "Kontrast" (contrasts that attract) and "OFF" (a vegetarian menu without fish and meat). Or you can opt for the chef’s special "Signature Dish" which is a mixture of both menus. Specialties include the exquisite saddle of deer smoked in hay with salted cherries, deer Beuschel (organ meat), red wine vinegar, and udon noodles. Those with a sweet tooth will surely love the plum sorbet with stewed plums, lukewarm yeast milk, and grated licorice truffles. Good to know: vegetarian and vegan options are available upon request.
Restaurant Posthotel Alexander Herrmann is located in the town of Wirsberg, in Bavaria.
